    Fluffy, naturally sweet pancakes perfect for a fun breakfast or snack!

    Ingredients
    • 1 ripe banana, mashed

    • 1 cup (120g) whole wheat flour

    • 1 tsp (5g) baking powder

    • 1/2 tsp (2g) cinnamon (optional)

    • 1/2 cup (120ml) milk (or plant-based alternative)

    • 1 egg

    • 1 tsp (5ml) vanilla extract (optional)

    • 1 tbsp (15ml) honey or maple syrup

    • 1 tbsp (15ml) olive oil or melted butter

    • 1 cup of fresh fruit, nuts or chocolate chips

    Method
    1. Mix the banana, egg, milk, vanilla, and honey.

    2. Combine dry ingredients in a separate bowl and mix with the wet ingredients.

    3. Cook pancakes on a greased non-stick pan for 1-2 minutes per side.

    4. Decorate with fresh fruit, nuts or chocolate chips.
