Fun & Healthy Banana Pancake Recipe
Fluffy, naturally sweet pancakes perfect for a fun breakfast or snack!
Ingredients
1 ripe banana, mashed
1 cup (120g) whole wheat flour
1 tsp (5g) baking powder
1/2 tsp (2g) cinnamon (optional)
1/2 cup (120ml) milk (or plant-based alternative)
1 egg
1 tsp (5ml) vanilla extract (optional)
1 tbsp (15ml) honey or maple syrup
1 tbsp (15ml) olive oil or melted butter
1 cup of fresh fruit, nuts or chocolate chips
Method
Mix the banana, egg, milk, vanilla, and honey.
Combine dry ingredients in a separate bowl and mix with the wet ingredients.
Cook pancakes on a greased non-stick pan for 1-2 minutes per side.
Decorate with fresh fruit, nuts or chocolate chips.
